Half Dane and half Italian I find my roots both in the gastronomical abundance and beauty of the Italian cuisine and the cold and raw Nordic nature. This has shaped my approach to food ever since. I have managed the iconic hotels and restaurants at Tisvildeleje Strandhotel and Helenekilde Badehotel where I strived to integrate the traditions and methods from the Italian kitchen with the foraging traditions of the Nordic countries. 

I have since devoted my self to tell the stories of traditional methods and tastes of the past from all over the world in my foodbooks, as a chef on national television and as a speaker at events and in public debates.

 

For me food is about paying attention to seasons, produce, locality and to one’s own tastebuds. It is about patience and awareness. Properties that will ultimately provide us all with a better mental health and society, as a whole.
